Healthier Pumpkin Bread

Ingredients you will need:
  • 1 1/2 cup oat flour

  • 1 1/2 cup blanched almond flour

  • 2 tsp pumpkin pie spice

  • 1 tsp cinnamon

  • 2 tsp baking powder

  • 1/2 tsp baking soda

  • 1 tsp salt

  • 3/4 cup light brown sugar

  • 1/3 cup butter

  • 2 eggs

  • 1 1/2 tsp. vanilla extract

  • 1 can pumpkin purée

Cream Cheese Pumpkin Spice Icing Ingredients:
  • 4 oz cream cheese

  • 4 oz butter

  • 1 cup confectioners sugar

  • 3 tsp pumpkin pie spice

  • 1 pinch of salt

Directions:
  1. Preheat oven to 350

  2. In one mixing bowl, gently mix dry ingredients: oat flour, almond flour, pumpkin pie spice, cinnamon, baking powder, baking soda, and salt.

  3. In another mixing bowl, use mixer to mix together melted butter and sugar. Add vanilla and one egg at a time. Lastly, add pumpkin purée.

  4. Mix dry and wet ingredients and mix with a spoon.

  5. Pour batter into bread pan lined with parchment paper or lightly coated with baking spray.

  6. Bake for 50 minutes.

Icing Directions:
  1. Mix together cream cheese, softened butter, confectioners sugar, pumpkin pie spice, and salt with a mixer. Done!
